The Big Chilli, Chilli Eating Contest

Armidale ShowgroundThis is a last person standing, winner-takes-all, knockout event like no other; daring competitors will step up to the plate, ready to endure the fire and fight for the honour of being named THE BIG CHILL’s 2026 ultimate chilli-eating contest champion – ‘THE BIG CHILLI’. Presented by Crack Fox Hot Sauce.
- 2 heats – 1 final destruction round
- The top 2 competitors from each heat advance to the final showdown.
- The heat rounds will start off relatively mild, but it won’t stay that way for long. Prepare for an escalating battle as each round gets hotter and more intense!
- Expect everything from hot sauce, fresh pods and chilli-infused foods and drinks. Starting with humble Jalapeños, progressing to the fearsome Carolina Reapers, and possibly beyond

Armidale ShowgroundIf BBQ feasts are up your alley, head directly to BBQ Alley, do not pass go, do not collect $200. Instead, do enjoy the live cooking demonstrations, the taste tests and the one and only BBQ @ The Big Chill Competition.

- Steak Cooking Demo – Chat rubs, webers, charcoal, and how to select, and cook, the perfect steak over live fire with Glenn – Smoking Dog BBQ, Emma – Alpha Furnishers (Armidale’s local Weber specialist dealer), Stu the Butcher, and Mark – The Meat Game Podcast.
- Lamb Carcass Breakdown – Watch as a lamb carcass is broken down into individual cuts and prepared for spit roasting over charcoal by Stu the Butcher – Head Judge of World Butcher Wars, while UNE Meat Scientist – Professor Peter McGilchrist, chats meat quality and cooking methods! And who knows, Meat Game Mark might just join in the fun!
- Sausage making Demo – Get ready to take notes, because the self-proclaimed Sausage Professor is in session. Mark from The Meat Game Podcast is bringing his expertise, and probably a few strong opinions, to The Big Chill with a live Lamb and Beer Sausage Making Demo that’s equal parts education and entertainment. Adult supervision will likely be provided by Stu the Butcher, because some classrooms need a professional on standby. Whether you’re a seasoned sausage maker or you’ve never touched a casing in your life, this is one class you won’t want to skip.
- Low ‘n’ Slow Pork Ribs – Catch the boys – Stu the Butcher, Mark from The Meat Game podcast, and Glenn from Smoking Dog BBQ as they pull back the curtain on competition-worthy pork ribs. This isn’t just about lighting a fire; it’s a masterclass in the holy trinity of BBQ:
- Time: Finding that perfect window for “bite-through” tenderness
- Temperature: Mastering heat management for consistent results.
- Rubs: Layering flavors that make the meat sing.

The Sunday K – Community Swim

Monckton Aquatic Centre, 152 Dumaresq St, ArmidaleFeel like getting fresh?
Due to the ongoing drought conditions and low water levels, the Big Chilly Dip will not take place at Dumaresq Dam in 2026. Instead we have joined forces with The Sunday K – a free cold water community swim to be held at Armidale Monckton Outdoor Aquatic Centre.
Free bacon and egg rolls provided by Lions.BYO swimming trunks, wetsuit, towel, hot water bottle, whatever you can find to keep warm alongside an upbeat, piping hot attitude. We’ll provide the cheers of support from the sidelines.- Registration online at The Sunday K
- Briefing at 8.45am
- Sunday K swim at 9am (just swim as much as you can, no need for the full 1K)

Curtis Park, ArmidaleHead down to Curtis Park on Sunday May 17 for a special Armidale Farmers’ Market, featuring three bands in an event staged by Black Gully Festival and Musicians of Armidale. Enjoy fresh produce, good vibes and live music from OhMaSoul music, MC & The Squares, and the Rocky Bottom Girls from 9am.
Come and support this fabulous market and equally wonderful bunch of local musicians. This is a special market on the weekend of The Big Chill – see you there!
